  • 4 cups shredded zucchini
  • 1 pound ground beef
  • 2 large eggs
  • 2 cups pizza sauce
  • 1/2 cup chopped onion
  • 1 green bell pepper, chopped
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, mix shredded zucchini with salt and let sit for 10 minutes. Squeeze out excess moisture.
  2. Combine drained zucchini with eggs, Parmesan cheese, and half of mozzarella cheese.
  3. Press the mixture into a greased baking dish and bake for 20 minutes until set.
  4. Meanwhile, cook ground beef with chopped onion until browned. Drain fat, then add pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper; simmer for 5 minutes.
  5. Spread the beef mixture over the baked crust, top with remaining mozzarella cheese, and bake for an additional 20 minutes until bubbly.
  6. Cool slightly before slicing and serve warm.
