Ingredients

Scale
  • 1 large skinless salmon fillet (about lbs)
  • 2 cups fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together chopped spinach, feta cheese, garlic, cream cheese, lemon zest, lemon juice, dill, salt, and pepper until well combined.
  3. Lay the salmon fillet flat and slice horizontally without cutting all the way through to create an even layer. Pat it dry.
  4. Spread the spinach and feta mixture evenly over the salmon. Roll it tightly from one end and secure with toothpicks or kitchen twine.
  5. Place in a greased baking dish, drizzle with olive oil, season lightly with salt and pepper, and bake for about 18 minutes or until cooked through.
