  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 cups fresh cheese tortellini
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and black pepper, to taste

Instructions

  1. Season chicken with salt and pepper. In a large pot, melt butter over medium-high heat. Cook chicken until browned and cooked through, about 6-8 minutes. Remove from pot and set aside.
  2. In the same pot, add more butter if needed and sauté garlic for about 30 seconds until fragrant. Stir in crushed red pepper flakes.
  3. Pour in chicken broth while scraping any bits off the bottom of the pot. Next, stir in heavy cream and bring to a gentle simmer.
  4. Add tortellini to the sauce and cook for about 4-6 minutes until tender.
  5. Return chicken to the pot and stir in grated Parmesan cheese until melted. Cook for another 2-3 minutes before serving.
