  • 2 tablespoons olive oil
  • 1/2 cup sliced jalapeños
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Fresh cilantro and lime wedges for garnishing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix garlic powder, smoked paprika, cumin, salt, and pepper. Rub seasoning over chicken breasts.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until browned.
  4. Lower heat and add butter to the same skillet. Sauté minced garlic and jalapeños for 1-2 minutes.
  5. Stir in cream cheese and sour cream until smooth; add chicken broth while stirring until creamy.
  6. Return the seared chicken to the skillet and sprinkle with cheddar cheese.
  7. Bake for 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbly.
