  • 2 cups shredded rotisserie chicken
  • 1/4 lb. diced turkey slices
  • 1/4 lb. diced turkey pepperoni
  • 1/4 cup diced provolone cheese
  • 1/4 cup crumbled feta cheese
  • 2/3 cup diced grape tomatoes
  • 1/3 cup sliced banana peppers
  • 1/2 thinly sliced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup grated parmesan
  • 3 tablespoons apple cider vinegar
  • 12 tablespoons banana pepper juice from the jar
  • 1 tsp oregano
  • 1 tsp garlic powder
  • Freshly cracked pepper
  • Salt to taste

Instructions

  1. Make the dressing by combining mayonnaise, grated parmesan, apple cider vinegar, banana pepper juice, oregano, garlic powder, freshly cracked pepper, and salt in a bowl. Taste and adjust seasoning as needed.
  2. In a large bowl, mix together shredded chicken, diced turkey slices, turkey pepperoni, red onion, grape tomatoes, banana peppers, provolone cheese, and feta cheese.
  3. Pour most of the dressing over the mixture and toss to coat evenly. Add more dressing if desired.
  4. Store in an airtight container in the fridge for up to four days. Serve chilled with veggies or as a sandwich filling.
