  • 1 canned evaporated milk (12 oz)
  • 1 cup chicken broth
  • 23 cups cooked chicken, shredded
  • 1 teaspoon Creole seasoning
  • 1 teaspoon chicken bouillon
  • ½ tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped flat-leaf parsley

Instructions

  1. In a medium pot over medium heat, melt butter. Add diced onion, minced garlic, sliced carrots, diced celery, fresh thyme, and bay leaf. Sauté for 5-6 minutes until softened.
  2. Stir in flour until fully incorporated. Gradually add evaporated milk and chicken broth while stirring continuously.
  3. Increase heat slightly until the mixture reaches a gentle boil, stirring continuously for creamy consistency.
  4. Add shredded chicken, Creole seasoning, chicken bouillon, frozen peas, salt, and pepper to taste. Gently stir to combine.
  5. Serve warm in bowls and garnish with chopped parsley if desired.
