  • 2 large eggs
  • ½ cup pumpkin puree
  • ⅓ cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ tsp baking soda
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until well combined.
  3. Add the oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet ingredients. Mix gently until just combined; fold in chocolate chips.
  4. Pour the batter into a lined 8×8 pan and spread evenly. Sprinkle extra chocolate chips on top if desired.
  5. Bake for 24 – 26 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow to cool for at least 10 minutes before slicing into squares.
