  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon all-purpose flour
  • 2 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides. Remove from pot and set aside.
  2. In the same pot, sauté chopped onions and minced garlic until onions are translucent.
  3. Stir in tomato paste and flour; cook for about one minute.
  4. Pour in beef broth and non-alcoholic stout substitute; stir well.
  5. Return browned beef to the pot along with carrots, potatoes, thyme, salt, and pepper. Mix well.
  6. Bring to a boil then reduce heat to low. Cover and let simmer for 1.5 to 2 hours.
  7. Adjust seasoning as needed before serving.
