  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika
  • 1 package (20 oz) cheese tortellini, fresh or refrigerated
  • ½ cup shredded mozzarella, for topping
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season steak with salt and pepper; sear in olive oil for 2–3 minutes per side until browned.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Stir in flour to form a roux.
  4. Gradually whisk in milk and beef broth; stir until smooth. Add cheddar cheese until melted.
  5. Cook tortellini according to package directions, slightly undercooking them.
  6. Combine tortellini, seared steak, and cheese sauce in a greased baking dish; top with mozzarella.
  7. Bake uncovered for 20–25 minutes until bubbly and golden brown.
