  • 1 tbsp olive oil
  • 4 shallots (diced)
  • 1 rib celery (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 1/3 cup chicken stock
  • 2 apples (peeled, cored, and cut into wedges)
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). Pat chicken dry and season with salt.
  2. In a large casserole dish, brown the chicken in olive oil over medium-high heat until golden. Remove and set aside.
  3. In the same pan, sauté shallots, celery, and thyme until soft; add garlic and cook for another 30 seconds.
  4. Stir in apple juice and scrape any browned bits from the bottom. Add flour to create a paste.
  5. Gradually pour in chicken stock and stir until thickened; then mix in apple cider before returning chicken to the pan.
  6. Cover and bake for 30 minutes; uncover and bake for an additional 30 minutes.
  7. Sauté apple wedges separately until golden; stir them into the casserole along with heavy cream before baking uncovered for another 20 minutes.
