Scale
  • 1 Tablespoon olive oil
  • 2 Tablespoon butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 Tablespoons chives

Instructions

  1. Begin by preheating your oven to 375°F. In a large pan over medium-high heat, combine butter and olive oil.
  2. Season sirloin cubes with salt and pepper, then add them to the hot oil. Brown the meat for about 6-8 minutes until golden on all sides.
  3. Add chopped onions and carrots to the pan, sautéing for an additional 4-5 minutes until softened.
  4. Sprinkle flour over the mixture, stirring well. Pour in apple cider and beef broth; bring to a gentle boil.
  5. Transfer everything to an oven-safe dish, cover tightly, and bake for about 1 – 1½ hours.
  6. Meanwhile, boil peeled potatoes until tender (about 15-20 minutes), drain, and mash with milk, sour cream, cheese, and chives until creamy.
  7. Serve generous portions of mashed potatoes topped with the apple cider stew.
