  • 1 pound ground turkey
  • 1 small sweet onion
  • 1 cup shredded carrots
  • 1 small head cabbage
  • ¼ cup chicken broth
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 2 tablespoons olive oil (divided)
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha Mayo (optional)

Instructions

  1. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add ground turkey and brown for about 5-6 minutes.
  2. Push the turkey to one side of the skillet. Add diced onion and remaining olive oil; sauté until translucent (3-4 minutes).
  3. Stir in shredded carrots, minced garlic, and ginger; cook for another couple of minutes.
  4. Pour in chicken broth, followed by cabbage, soy sauce, rice vinegar, salt, and pepper. Stir well and cover; cook on medium-low for 12-15 minutes until cabbage is tender yet crunchy.
  5. Remove from heat and stir in toasted sesame oil before serving over cooked white rice. Garnish with green onions and sesame seeds.
