  • 1 lb ground beef or ground turkey
  • ½ cup breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup small pasta (such as ditalini or orzo)
  • Spinach or kale
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mix ground beef (or turkey), breadcrumbs, egg, Parmesan cheese, Italian seasoning, minced garlic, salt, and pepper until just combined. Form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5-7 minutes and set aside.
  3. In the same pot, sauté chopped onion, carrots, celery, and garlic until softened.
  4. Add chicken or vegetable broth and scrape any brown bits from the bottom. Bring to a simmer.
  5. Return meatballs to the pot along with heavy cream. Stir in pasta and cook until al dente.
  6. Fold in chopped spinach or kale before serving.
