  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Prep the Potatoes: Poke each potato with a fork, then microwave for four minutes on one side. Flip and microwave for another four minutes.
  2. Preheat the Oven: Preheat to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Coat the Potatoes: In a bowl, toss microwaved potatoes with olive oil, salt, and pepper until well-coated.
  4. Smash and Bake: Spread on the baking sheet and gently smash each potato to about 3/8" thick. Bake for 6 minutes, flip, then bake for another 6 minutes until crispy.
  5. Final Touches: Remove from the oven, sprinkle with parsley, and drizzle with melted butter before serving.
