  • 12 ounces pasta (rotini, penne, or bowtie)
  • 1 ½ cups cherry tomatoes (halved)
  • 8 ounces fresh mozzarella (diced or mozzarella balls)
  • ½ cup fresh basil (chopped or torn)
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste
  • For the balsamic glaze: ½ cup balsamic vinegar and 1 tablespoon honey or brown sugar

Instructions

  1. Cook pasta according to package directions until al dente. Drain and let cool slightly.
  2. While pasta cooks, halve cherry tomatoes and dice mozzarella.
  3. Chop fresh basil.
  4. In a saucepan over medium heat, combine balsamic vinegar and honey (or brown sugar). Simmer until thickened.
  5. In a large bowl, combine the cooled pasta, tomatoes, mozzarella, basil, olive oil, salt, and pepper. Drizzle with balsamic glaze and toss gently.
  6. Serve immediately or chill for later enjoyment.
