  • 17g plain flour
  • 1/8 tsp cinnamon
  • 175g unsalted butter (softened)
  • 175g light brown sugar
  • 3 large eggs
  • 175g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175g unsalted butter (softened)
  • 350g icing sugar
  • 1.5 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with sugar and spices until soft. Cool.
  2. Make the crumble topping by mixing flour and sugar with butter until crumbly; bake until golden.
  3. For the cupcakes, cream butter and sugar together then add eggs one at a time. Fold in dry ingredients and bake until golden.
  4. Core cooled cupcakes and fill with apple mixture.
  5. Beat butter for buttercream; gradually add icing sugar and milk until smooth.
