  • 2 ½ sticks unsalted butter (20 tablespoons)
  • 1 ½ cups brown sugar
  • ½ cup granulated sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup apple cider
  • 2 cups apple cider (for glaze)
  • 2 Tablespoons salted butter (for glaze)
  • ⅓ cup granulated sugar (for glaze)
  • 2 Tablespoons demerara or turbinado sugar (for glaze)
  • 1 ½ teaspoons cinnamon (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg; set aside.
  3. In a stand mixer, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs one at a time followed by vanilla extract; mix until combined.
  5. Gradually add dry ingredients to the wet mixture while streaming in apple cider; mix just until combined.
  6. Pour batter into the prepared bundt pan and bake for 40-50 minutes or until a toothpick inserted comes out clean.
  7. For the glaze, boil two cups of apple cider until reduced to about ⅓ cup; stir in butter until melted.
  8. Brush glaze over the warm cake and dust with cinnamon sugar before serving.
